We are a leading high-end food production facility specialising in prepared meals, grab-and-go meals, platters, and patisserie, among other culinary delights. We cater to a diverse range of clients, including corporate, the aviation industry, catering sites, and private customers for events, functions, and staff canteens. With our commitment to excellence and innovation, we are seeking a dynamic and experienced individual to join our team as a Sous Chef/Senior Chef de Partie.Position: Sous Chef/Senior Chef de Partie Location: Cape Town Employment Type: ContractResponsibilities:Assist the National Executive Group Chef in the planning, coordination, and execution of culinary operations.Oversee the preparation and production of high-quality prepared meals, grab-and-go items, platters, and patisserie products.Ensure that all dishes are prepared and presented according to established recipes and standards.Train, mentor, and supervise kitchen staff to maintain consistency and efficiency in food production.Manage inventory levels, ordering, and stock rotation to minimize waste and ensure freshness.Uphold strict hygiene, health, and safety standards in compliance with regulatory requirements; we are a HACCP facility.Collaborate with other departments to develop and implement new menu items and concepts.Contribute to menu planning, costing, and pricing strategies to optimise profitability.Actively participate in menu tastings, events, and client meetings as required.Requirements:Proven experience as a Sous Chef or Senior Chef de Partie in a high-volume, high-end food production environment.Strong culinary skills with a focus on quality, creativity, and attention to detail.Excellent leadership and communication abilities with the capacity to motivate and inspire a team.Proficiency in menu planning, recipe development, and food costing.Knowledge of food safety and sanitation practices, HACCP principles, and kitchen management procedures.Ability to thrive in a fast-paced, deadline-driven environment while maintaining composure under pressure.Flexibility to work evenings, weekends, and holidays as needed.Certification from a culinary institute or relevant qualification is preferable.
