To assist the Maitre Chocolatier and team to prepare chocolates and other chocolate related items.Â
- Responsible for preparing the recipes in accordance with the chocolate shop specifications.
- Prepare chocolate products as specified by the Maitre Chocolatier ensuring food safety and high quality.
- Check cleanliness of Chocolate shop before each shift starts.
- Production of a range of chocolate decorations.
- Check temperature and condition of materials and refrigerators.
- Collect daily from the F&B Store all supplies required for immediate operations.
- Correct handling of allergens for guest with specific dietary requirements.
- Performs overall quality control of all chocolate shop items.
- Follows all food safety protocols in the pastry department in compliance with MSC Food safety standards.
- Ensures that food is properly stored, sets up the workstations and keeps it clean at all times.
- Prepare the daily mise en place and food production.
- Minimize food spoilage.
- Comply with international HACCP.
- Proficient English, oral and written skills.
- Proven successful experience for at least 2 contracts in a similar position in a major hotel operating under International Food Safety Standards, Chocolate shop or a cruise ship.
