Candidate Requirements:
- Must have previous working experience in the F&B department as an F&B Supervisor, Host or similar position
- Previous working experience within a luxury lodge environment
- Must be able to monitor and manage all Food & Beverage service operations
- Ensure all restaurant staff are well trained to provide the highest standard of service and comply with Skills Development requirements
- Be able to motivate restaurant staff to promote cellar wines to guests (staff earn commission)
- Be able to supervise, monitor and discipline restaurant staff
- Ensure that all service (bar, dining areas, guest toilets & outside deck) and preparation areas (waiter station & waiter fridge) are clean, ready, and set up for the next service according to health and safety guidelines
- Experienced in weekly shift rostering and ensuring all restaurant staff are aware of shifts
- Sound knowledge of all stock control (stock orders and stock takes) of all beverages on the property as well as equipment in the bar, dining room & boma and crockery, cutlery & glassware used in the restaurant
- Have excellent communications skills (written and verbal)
- Have strong hosting skills and is someone who is guest and service-focused
- Be able to liaise daily with the head chef (or chef on duty) on dishes served
- Have good knowledge of wine
- Must have intricate knowledge of all aspects of the lodge to answer all guests' questions
- Be able to plan and execute special occasions (Christmas dinner, New Year, Father's and Mother's Day, Valentines Day, Easter, etc.)
- Must be hands-on and willing to assist within other departments within reason.
Live-in position: Private room + bathroom
Salary: R10kpm + Medical aid contribution, bed nights, meals, wifi and laundry.
Work Cycle: 36 days on and 12 days off.
