Experienced Head Chef is needed to be involved in daily kitchen duties and overseeing all of the various Reserve Lodge kitchens. Food Preparation and Culinary Arts: Ensure excellent food standards in fine dining, delivering a memorable culinary experience to our guests. • Menu Development: Create innovative and diverse menus that cater to various tastes and preferences, incorporating the latest food trends. • Planning and Budgeting: Oversee kitchen administration, including ordering and maintaining stock within budgetary constraints. • Special Dietary Requirements: Plan and accommodate special dietary needs and allergies with precision and care. • Staff Supervision and Training: Lead and train kitchen staff, fostering a professional and efficient working environment. • Guest Focus: Maintain a guest-centric approach, ensuring a high level of satisfaction and personalized service. • Discipline and Emotional Control: Exhibit strong discipline and emotional control, maintaining a calm and organised kitchen. • Adaptability: Stay updated with current food trends and demonstrate the ability to adapt menus and cooking techniques accordingly. Diploma in Food Preparation and Culinary Arts. • Proven experience in a luxury environment with a stable employment history. • Strong knowledge of kitchen administration, planning, and budgeting. • Demonstrated ability to create and adapt menus. • Excellent communication and supervisory skills. • Contactable references. • Minimum 5 years of experience as an Executive Chef or Head Chef in a fine dining establishment. • Advanced culinary skills, such as sous-vide, molecular gastronomy, and contemporary plating techniques. • Proficiency in various cuisines, including but not limited to international, fusion, and traditional African dishes. • Certification in food safety and hygiene practices. • Proven track record of managing kitchen operations in remote or safari lodge settings. • Ability to work under pressure and maintain high standards in a fast-paced environment. • Strong leadership qualities with the ability to motivate and inspire a team. • Excellent problem-solving skills and the ability to handle guest complaints effectively. • Fluency in English; additional languages are a plus.
